... Perhaps I need to buy some thermometers for both cooler and freezer to see what they are doing in real numbers? ..
If you have a Harbor Freight Store near you,
you could use one of these (maybe two)
click on picture $ 4.99 sometimes on sale for $ 2.99
edit:
Fridge Thermometer probe should be set in a small (plastic) cup of water.
Freezer Thermometer probe buried into, or between, something ... bag of peas, etc ...
