ok it tests good but is most likely bad. the next step is to unplug the fridge and remove the 3 wire plug that has l1, compressor, and defrost terminals. jumper l1 and defrost to get the heater running. set up a chair and get comfy, watch the reading on the evap thermistor while the evaperator defrosts, i bet before its defrosted it will partially short. the control will end the defrost cycle at 7.8k or less, so if you get a reading at or below that before all the frost is melted the thermistor is bad. like i said i would replace it anyway, its the most likely culprit, not to mention the only part you havent replaced.
