I got out a hair dryer and thawed the two cores (one up and one down lower).  The centers of both cores melted easily, the bottom and sides were solid chunks. 

I then removed the defrost heater at the very bottom of the two cores (two screws and a wire at each end that simply unplugs.  The glass tube of the heater was broken into two pieces!  Obviously THIS needed replaced.  So I ordered up a new one and snapped this pic of the bad heater (bottom, the glass tube is blackened and actually cracked in half on the left side) and the new heater (glass tube clear with silver heater windings visible inside). 

Simply connect the wires and screw the new heater in place!  Reassemble and reload the freezer.  I'll know over the next day or so if the broken defrost heater was the only problem or if there are other issues hiding in the bushes.
