Why is it we must have refrigerators that dispense water and make ice whether we want it or not? ?  Some of us luddites prefer simplicity and more space: a fridge that just does its primary functions!

After trying to find a unit that doesn't insist on providing these unwanted features, gave up and got the JCD2295KES Jenn-Air side-by-side fridge for a good close-out price (hopefully it doesn't turn out to be a dog US Appliance is getting rid of......could find no ratings for it. )

In  past refrigerators , have just not hooked up the water , but when this unit arrives am  now considering removing some piece parts to reclaim  space as well.

What pieces can be gotten rid of to reclaim space without causing problems?

The Ice Maker and Ice Bucket assy. can be removed with no ill effects. Other componenets could be removed, but the space gained is not worth the effort.

A very good question indeed, since both ice and water are readily available through other means(and cheaper!) - On the flip side, it would eliminate about half of our service calls on refrigerators
